Delicious nachos topped with BBQ chicken, cheese, and fresh toppings.


Ingredients

Scale
  • 3 cups cooked shredded chicken
  • 1 cup barbecue sauce, plus more for topping as desired
  • 1 (16-ounce) bag tortilla chips
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup finely chopped fresh pineapple or 2 (8-ounce) cans pineapple tidbits, drained and patted dry
  • 1/4 cup thinly sliced red onion
  • 2 to 4 tablespoons chopped fresh cilantro

Instructions

  1. In a large bowl, mix together the shredded chicken and barbecue sauce until well coated.
  2. Arrange the chips in a single layer on a rimmed baking sheet.
  3. Top the chips evenly with the chicken.
  4. Sprinkle evenly with the cheese, pineapple, and onions.
  5. Bake until the chicken is warmed through and the cheese is melted, 5 to 7 minutes.
  6. Sprinkle with the cilantro, drizzle with extra barbecue sauce, and serve immediately with additional toppings as desired.
  7. If there are any leftovers, store them in an airtight container in the fridge for up to 5 days. Reheat in the microwave or air fryer.
