Description

Ingredients

  • 1 lb ground beef or turkey
  • 1 can (14 oz) diced fire-roasted tomatoes
  • 1 can (15 oz) black beans or kidney beans, drained and rinsed
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 bell pepper, chopped (any color)
  • 2 cups low-sodium chicken or vegetable broth
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions and sauté until translucent.
  2. Stir in ground meat, breaking it apart as it cooks until browned. Drain excess fat if necessary.
  3. Add chopped bell peppers, chili powder, and cumin; stir until fragrant.
  4. Pour in the diced tomatoes (with juices) and drained beans, mixing well.
  5. Add broth to reach your desired consistency and bring to a gentle simmer for about 10 minutes.
  6. Taste and adjust seasoning if needed before serving hot.
