Description

This Ground Turkey and Sweet Potato Skillet is a delicious and nutritious meal that combines lean protein and hearty vegetables.


Ingredients

  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 red bell pepper, diced
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, drained
  • 1 tbsp olive oil
  • 2 tbsp taco seasoning
  • 1/2 cup shredded cheddar cheese
  • to taste salt and pepper
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced sweet potatoes and cook for 6-8 minutes until slightly softened.
  3. Add onion and bell pepper to the skillet. Cook for another 3-4 minutes until vegetables begin to soften.
  4. Add garlic and ground turkey. Cook for 5-7 minutes, breaking up the turkey with a spoon, until the meat is browned and cooked through.
  5. Stir in diced tomatoes and taco seasoning. Season with salt and pepper to taste. Cover and let simmer for 6-8 minutes, or until sweet potatoes are tender.
  6. Sprinkle shredded cheddar cheese over the skillet. Cover and cook for 2 minutes, until cheese is melted.
  7. Remove from heat. Garnish with fresh cilantro if desired, and serve warm.
