Description
A fresh and healthy grilled chicken salad with spinach, strawberries, and avocado, topped with a balsamic vinaigrette.
Ingredients

- 4 oz boneless skinless chicken breasts
- 4 cups fresh spinach leaves
- 1 ripe avocado, diced
- 1 cup fresh strawberries, halved
- ¼ red onion, thinly sliced
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat. Season chicken with olive oil, salt, and pepper.
- Grill chicken for 6-7 minutes per side until cooked through (165°F internal temperature). Let rest before slicing.
- Wash spinach and slice strawberries and avocado.
- In a large bowl, combine spinach, strawberries, avocado, and red onion. Toss gently.
- Whisk together olive oil and balsamic vinegar in a small bowl; drizzle over salad.
- Serve salad topped with sliced grilled chicken.
Notes
- For extra flavor, marinate the chicken in olive oil, balsamic vinegar, salt, and pepper for 30 minutes before grilling.
