Description

A fresh and healthy grilled chicken salad with spinach, strawberries, and avocado, topped with a balsamic vinaigrette.


Ingredients

Scale
  • 4 oz boneless skinless chicken breasts
  • 4 cups fresh spinach leaves
  • 1 ripe avocado, diced
  • 1 cup fresh strawberries, halved
  • ¼ red onion, thinly sliced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat grill to medium-high heat. Season chicken with olive oil, salt, and pepper.
  2. Grill chicken for 6-7 minutes per side until cooked through (165°F internal temperature). Let rest before slicing.
  3. Wash spinach and slice strawberries and avocado.
  4. In a large bowl, combine spinach, strawberries, avocado, and red onion. Toss gently.
  5. Whisk together olive oil and balsamic vinegar in a small bowl; drizzle over salad.
  6. Serve salad topped with sliced grilled chicken.

  • For extra flavor, marinate the chicken in olive oil, balsamic vinegar, salt, and pepper for 30 minutes before grilling.
