- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, granulated sugar, brown sugar, and salt. Add melted butter and mix until crumbly. Set aside.
- In a large bowl, cream the butter and sugar together until fluffy. Beat in the egg, milk, and vanilla extract until smooth.
- In another bowl, mix the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
- Pour the batter into a greased 9×9-inch baking dish.
- In a medium saucepan, mix berries, sugar, cornstarch, and lemon juice. Cook over medium heat until the mixture thickens, stirring occasionally.
- Allow to cool slightly, then spread over the cake layer.
- In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Spread the whipped cream over the berry layer.
- Evenly sprinkle the prepared crumble mixture over the whipped cream.
- Bake in the preheated oven for 35-40 minutes or until the top is golden brown. Allow the cake to cool before serving.
Notes
- Ensure the butter is fully melted to achieve a perfect crumbly topping.
- You can substitute fresh berries with frozen ones, just be sure to thaw and drain them beforehand.
- Adjust sweetness based on the tartness of your berries.
- Serve the cake slightly warm or at room temperature with extra fresh berries on top for garnish.
