Description

  • 1 large egg
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

  • 2 cups mixed berries (raspberries, blueberries, blackberries)
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, granulated sugar, brown sugar, and salt. Add melted butter and mix until crumbly. Set aside.
  3. In a large bowl, cream the butter and sugar together until fluffy. Beat in the egg, milk, and vanilla extract until smooth.
  4. In another bowl, mix the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
  5. Pour the batter into a greased 9×9-inch baking dish.
  6. In a medium saucepan, mix berries, sugar, cornstarch, and lemon juice. Cook over medium heat until the mixture thickens, stirring occasionally.
  7. Allow to cool slightly, then spread over the cake layer.
  8. In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Spread the whipped cream over the berry layer.
  9. Evenly sprinkle the prepared crumble mixture over the whipped cream.
  10. Bake in the preheated oven for 35-40 minutes or until the top is golden brown. Allow the cake to cool before serving.

Notes

  • Ensure the butter is fully melted to achieve a perfect crumbly topping.
  • You can substitute fresh berries with frozen ones, just be sure to thaw and drain them beforehand.
  • Adjust sweetness based on the tartness of your berries.
