Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 teaspoon salt
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • Blue food coloring
  • 1 cup white chocolate chips
  • 1 cup mini chocolate chips
  • Mini chocolate chip cookies (for decoration)
  • Chocolate sandwich cookies, halved (for decoration)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Prepare Dry Ingredients: In a bowl, whisk together the flour and baking soda. Set aside.
  3. Mix Wet Ingredients: In a large mixing bowl, cream together the softened butter, granulated sugar, brown sugar, and salt until light and fluffy. Add in the vanilla extract and eggs, one at a time, beating well after each addition.
  4. Add Color: Gradually mix in blue food coloring until the desired shade is achieved.
  5. Combine Ingredients: Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the white chocolate chips and mini chocolate chips.
  6. Form Cookies: Scoop dough onto the prepared baking sheet using a spoon or cookie scoop. Gently press a halved chocolate sandwich cookie and a mini chocolate chip cookie onto the top of each dough ball to resemble Cookie Monster’s eyes and mouth.
  7. Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  8. Cool: Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
