Ingredients

  • 4 cups fresh broccoli florets (about 1 large head)
  • 1 cup sharp cheddar cheese, grated
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream

Instructions

  1. Sauté onions and garlic in a pot with olive oil over medium heat until soft (about 3 minutes).
  2. Add broccoli florets and vegetable broth; bring to a gentle simmer for about 10 minutes or until broccoli is tender.
  3. Blend the soup until smooth using an immersion blender or regular blender (blend half for chunkiness if desired).
  4. Return to low heat; stir in heavy cream and grated cheddar until melted.
