- 4 cups fresh broccoli florets (about 1 large head)
- 1 cup sharp cheddar cheese, grated
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 4 cups low-sodium vegetable broth
- 1 cup heavy cream
Instructions
- Sauté onions and garlic in a pot with olive oil over medium heat until soft (about 3 minutes).
- Add broccoli florets and vegetable broth; bring to a gentle simmer for about 10 minutes or until broccoli is tender.
- Blend the soup until smooth using an immersion blender or regular blender (blend half for chunkiness if desired).
- Return to low heat; stir in heavy cream and grated cheddar until melted.
- Season with salt, pepper, and a pinch of nutmeg to taste.
- Serve hot with extra cheese or croutons on top.
Notes
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
