Description

Ingredients

  • 1 cup dark brown sugar (packed)
  • ¾ cup unsalted butter (at room temperature)
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 ¼ cups all purpose flour (properly measured)
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ½ teaspoon kosher salt
  • ⅓ cup granulated sugar (for rolling)

Instructions

  1. Preheat oven to 350 degrees F. Line baking sheets with parchment paper. Set aside.
  2. In the bowl of a stand mixer fitted with the paddle attachment, add brown sugar, butter, egg, and vanilla. Beat until well combined.
  3. Add flour, baking soda, cinnamon, ginger, and salt. Mix until just combined.
  4. Scoop dough into 1 ½ tablespoon-sized portions (medium cookie scoop) and roll into balls.
  5. Pour sugar into a shallow bowl. Roll each dough ball into the sugar to coat all sides.
  6. Place on the prepared baking sheets, leaving about 2 inches between each one.
  7. Bake for about 8-15 minutes or until lightly golden brown around the edges. The edges should be set with slightly underbaked middles.
