Cheesy Beef Tortilla Bake

Description

This Cheesy Beef Tortilla Bake is a delicious combination of seasoned ground beef, cheese, and tortillas baked to perfection.


Ingredients

  • 1 pound ground beef
  • 1 cup onion (diced)
  • 1 cup red bell peppers (diced)
  • 1 small jalapeno (diced optional)
  • 3 tablespoons taco seasoning
  • 1/2 cup thick jarred salsa
  • 1 cup refried beans
  • 4 tablespoons butter (divided)
  • 2 cloves garlic (minced)
  • 3 large burrito-sized tortillas
  • 2 1/2 cups colby jack cheese (shredded)

Instructions

  1. Preheat your oven to 400 degrees and brush the skillet or pie dish with 1 tablespoon of butter.
  2. Heat a large skillet on medium high heat and add the ground beef, cooking for 1-2 minutes.
  3. Add in the onions, red bell pepper, and jalapenos, cooking with the beef until browned and no longer pink. Drain the grease if there is a lot.
  4. Add in the taco seasoning and cook another 30 seconds.
  5. Add in the salsa and refried beans, mixing until everything is combined. Remove from the heat.
  6. In a small pan, melt the butter with the garlic and set aside.
  7. Place the tortillas on a cutting board and cut each one in half.
  8. Add about 2 tablespoons of the shredded cheese into each half of the tortilla.
  9. Add about 1/2 cup of the meat mixture over the top of the cheese.
  10. Fold the tortilla sides over, forming a triangle, and place them into a prepared 12-inch skillet or pie dish.
  11. Brush the melted garlic butter over the top of the tortillas.
  12. Spread the remaining shredded cheese evenly over the top.
  13. Bake for 20 minutes or until golden and crispy.
  14. Top with pico de gallo, sour cream, or guacamole and serve!
