Description

This spicy southern cheesy chicken spaghetti casserole is a comforting dish that combines tender spaghetti with shredded chicken, creamy sauce, and plenty of cheese. Perfect for family dinners!

  • 2 cups cooked chicken, shredded
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (10 oz) can cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 cup sour cream
  • 1/4 cup chopped parsley

Instructions

  1. Cook the spaghetti – Start by bringing a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until just al dente. Drain and set aside.
  2. Sauté the vegetables – Heat olive oil in a large skillet over medium heat. Add diced onion and bell pepper. Cook for about 4–5 minutes until soft and fragrant. Add the minced garlic and cook for another minute.
  3. Build the creamy sauce – Stir in the diced tomatoes with green chilies, cream of chicken soup, chicken broth, sour cream, paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Let the mixture simmer gently for 3–4 minutes.
  4. Add the chicken and pasta – Fold the shredded chicken into the sauce, then add the cooked spaghetti. Stir until everything is well coated in the creamy, spicy sauce.
  5. Add the cheese – Mix in half of the cheddar and mozzarella cheeses.
  6. Assemble the casserole – Transfer the mixture to a greased 9×13-inch baking dish. Sprinkle the remaining cheese evenly over the top.
  7. Bake until bubbly – Bake at 375°F (190°C) for 20–25 minutes, or until the cheese is melted and lightly golden.
  8. Garnish and serve – Sprinkle chopped parsley over the casserole before serving. Let it rest for about 5 minutes so it sets slightly.
