- 1 lb baby potatoes, halved
- 12 oz smoked sausage, sliced
- 1 oz ranch dressing mix (about 1 packet)
- 1 cup shredded sharp cheddar cheese
- 2 tbsp extra virgin olive oil
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine olive oil and ranch dressing mix.
- Toss baby potatoes and smoked sausage in the mixture until evenly coated.
- Spread on a parchment-lined baking sheet and roast for 25-30 minutes until golden brown.
- Remove from oven, sprinkle cheese on top, and return for an additional 5-7 minutes until melted.
- Garnish with fresh parsley and serve hot.
