Description

A delicious dish featuring roasted baby potatoes and smoked sausage, garnished with cheese and parsley.


Ingredients

  • 1 lb baby potatoes, halved
  • 12 oz smoked sausage, sliced
  • 1 oz ranch dressing mix (about 1 packet)
  • 1 cup shredded sharp cheddar cheese
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine olive oil and ranch dressing mix.
  3. Toss baby potatoes and smoked sausage in the mixture until evenly coated.
  4. Spread on a parchment-lined baking sheet and roast for 25-30 minutes until golden brown.
  5. Remove from oven, sprinkle cheese on top, and return for an additional 5-7 minutes until melted.
  6. Garnish with fresh parsley and serve hot.
