A delicious and comforting cheesy chicken and broccoli casserole that is easy to make and perfect for a weeknight dinner.

- 2 chicken breasts, diced
- 3 cups potatoes, diced and parboiled
- 2 cups broccoli florets, blanched
- 1 1/2 cups shredded cheddar cheese
- 1 can cream of chicken soup
- 1/2 cup sour cream
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375°F and grease a 9×13 baking dish.
- Cook diced chicken in olive oil until no longer pink; season with salt, pepper, and garlic powder.
- Parboil potatoes in salted water for 5-7 minutes, then drain.
- Blanch broccoli florets in boiling water for 2-3 minutes and drain.
- In a large bowl, mix chicken, potatoes, broccoli, cream of chicken soup, sour cream, half the cheese, onion powder, garlic powder, salt, and pepper.
- Pour mixture into baking dish and top with remaining cheese.
- Bake for 25-30 minutes until bubbly and golden. Let rest 5 minutes before serving.
Notes
- This casserole can be made ahead of time and stored in the refrigerator until ready to bake.
- Feel free to add other vegetables like carrots or peas for extra nutrition.
