Description

A delicious and comforting cheesy chicken and broccoli casserole that is easy to make and perfect for a weeknight dinner.


Ingredients

  • 2 chicken breasts, diced
  • 3 cups potatoes, diced and parboiled
  • 2 cups broccoli florets, blanched
  • 1 1/2 cups shredded cheddar cheese
  • 1 can cream of chicken soup
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F and grease a 9×13 baking dish.
  2. Cook diced chicken in olive oil until no longer pink; season with salt, pepper, and garlic powder.
  3. Parboil potatoes in salted water for 5-7 minutes, then drain.
  4. Blanch broccoli florets in boiling water for 2-3 minutes and drain.
  5. In a large bowl, mix chicken, potatoes, broccoli, cream of chicken soup, sour cream, half the cheese, onion powder, garlic powder, salt, and pepper.
  6. Pour mixture into baking dish and top with remaining cheese.
  7. Bake for 25-30 minutes until bubbly and golden. Let rest 5 minutes before serving.

Notes

  • This casserole can be made ahead of time and stored in the refrigerator until ready to bake.
