- 1 ½ cups graham cracker crumbs
- ¼ cup sugar
- ½ cup unsalted butter, melted
- 24 oz cream cheese, softened

- 1 tsp vanilla extract
- 3 large eggs

- 2 tbsp unsalted butter, melted
- ¼ cup light brown sugar
- 1 tbsp ground cinnamon
- Whipped cream for topping

Instructions
- Preheat the oven to 325°F (163°C).
- In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes and set aside to cool.
- In a small bowl, mix melted butter, brown sugar, and cinnamon until smooth. Set aside.
- In a large mixing bowl, beat the cream cheese until smooth. Add sugar and vanilla extract, mixing until fully combined. Beat in eggs one at a time, ensuring each is incorporated before adding the next. Stir in sour cream until the mixture is smooth.
- Pour half of the cheesecake filling over the cooled crust. Drizzle half of the cinnamon mixture over the filling, using a knife to create swirls. Pour the remaining cheesecake filling on top, and repeat the swirling process with the rest of the cinnamon mixture.
- Place the cheesecake in the oven and bake for 50-60 minutes or until the center is set. Turn off the oven and let the cheesecake cool inside for about an hour. Remove the cheesecake from the oven and run a knife around the edges to prevent cracking. Refrigerate for at least 4 hours, or overnight for best results.
- Top with whipped cream and dust with cocoa powder. Garnish with cinnamon sticks if desired before serving.
