Ingredients

  • ¼ cup sugar
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • ½ cup sour cream
  • 2 tbsp unsalted butter, melted
  • ¼ cup light brown sugar
  • 1 tbsp ground cinnamon
  • Whipped cream for topping
  • Cinnamon sticks for garnish (optional)
  • Cocoa powder for dusting

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes and set aside to cool.
  3. In a small bowl, mix melted butter, brown sugar, and cinnamon until smooth. Set aside.
  4. In a large mixing bowl, beat the cream cheese until smooth. Add sugar and vanilla extract, mixing until fully combined. Beat in eggs one at a time, ensuring each is incorporated before adding the next. Stir in sour cream until the mixture is smooth.
  5. Pour half of the cheesecake filling over the cooled crust. Drizzle half of the cinnamon mixture over the filling, using a knife to create swirls. Pour the remaining cheesecake filling on top, and repeat the swirling process with the rest of the cinnamon mixture.
  6. Place the cheesecake in the oven and bake for 50-60 minutes or until the center is set. Turn off the oven and let the cheesecake cool inside for about an hour. Remove the cheesecake from the oven and run a knife around the edges to prevent cracking. Refrigerate for at least 4 hours, or overnight for best results.
  7. Top with whipped cream and dust with cocoa powder. Garnish with cinnamon sticks if desired before serving.
