Ingredients

- 1 lb lean ground beef
- 4 cups green cabbage, chopped
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 28 oz can crushed tomatoes (no added sugar)
- 4 cups low-sodium beef broth
- 1 cup uncooked white or brown rice
- 2 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp lemon juice
Instructions
- Prepare ingredients: Chop onions and garlic; dice cabbage into bite-sized pieces.
- In a large pot over medium heat, add olive oil. Sauté onions until translucent (about 5 minutes).
- Add ground beef; cook until browned, stirring occasionally.
- Stir in garlic and cook until fragrant (about 1 minute).
- Add crushed tomatoes, beef broth, rice, and cabbage; stir to combine.
- Season with Italian seasoning, salt, and pepper. Bring to a boil then reduce heat to simmer.
- Cook for about 30 minutes or until rice is tender and cabbage is soft.
Notes
- This soup can be frozen for later meals. Just reheat when ready to serve.
- For a spicier version, add red pepper flakes.
