Ingredients

  • 4 cups green cabbage, chopped
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 28 oz can crushed tomatoes (no added sugar)
  • 4 cups low-sodium beef broth
  • 1 cup uncooked white or brown rice
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp lemon juice

Instructions

  1. Prepare ingredients: Chop onions and garlic; dice cabbage into bite-sized pieces.
  2. In a large pot over medium heat, add olive oil. Sauté onions until translucent (about 5 minutes).
  3. Add ground beef; cook until browned, stirring occasionally.
  4. Stir in garlic and cook until fragrant (about 1 minute).
  5. Add crushed tomatoes, beef broth, rice, and cabbage; stir to combine.
  6. Season with Italian seasoning, salt, and pepper. Bring to a boil then reduce heat to simmer.
  7. Cook for about 30 minutes or until rice is tender and cabbage is soft.

Notes

  • This soup can be frozen for later meals. Just reheat when ready to serve.
  • For a spicier version, add red pepper flakes.
