- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 cloves fresh garlic, minced
- 2 medium carrots, diced
- 1 cup frozen peas
- 2 stalks celery, diced
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 tsp dried thyme

Instructions
- Prepare your ingredients by dicing the carrots, celery, and garlic; cut the chicken into bite-sized pieces.
- In a large pot over medium heat, add oil and cook the chicken pieces until golden brown (about 5 minutes). Season with salt and pepper.
- Add garlic, carrots, celery, and frozen peas; stir for about 5 minutes until slightly softened.
- Pour in the chicken broth and bring to a gentle boil. Reduce heat and simmer for 15 minutes.
- Stir in heavy cream and dried thyme; simmer for an additional 5 minutes until thickened.
- Serve in bowls garnished with fresh parsley if desired.
