A delicious creamy mushroom soup made with fresh mushrooms, onions, garlic, and herbs.

- 1 lb fresh mushrooms (cremini and shiitake)
- 1 medium yellow onion, finely chopped
- 3 cloves garlic, minced
- 4 cups low-sodium vegetable broth
- 1 cup heavy cream
- 2 tsp fresh thyme (or 1 tsp dried)
- 2 tbsp butter
Instructions
- In a large pot over medium heat, melt the butter. Sauté the chopped onion until translucent (about 5 minutes).
- Add minced garlic and sauté for another minute.
- Stir in the fresh mushrooms and cook until they release moisture and turn golden brown (about 8 minutes).
- Pour in the vegetable broth and add thyme. Simmer for about 10 minutes.
- Blend the soup until smooth using an immersion blender or regular blender.
- Stir in heavy cream and season with salt and pepper to taste; simmer gently for another 5 minutes.
- Serve hot, garnished with fresh thyme or olive oil.
