Description

Ingredients

  • 1 lb fresh mushrooms (cremini and shiitake)
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • 2 tsp fresh thyme (or 1 tsp dried)
  • 2 tbsp butter

Instructions

  1. In a large pot over medium heat, melt the butter. Sauté the chopped onion until translucent (about 5 minutes).
  2. Add minced garlic and sauté for another minute.
  3. Stir in the fresh mushrooms and cook until they release moisture and turn golden brown (about 8 minutes).
  4. Pour in the vegetable broth and add thyme. Simmer for about 10 minutes.
  5. Blend the soup until smooth using an immersion blender or regular blender.
  6. Stir in heavy cream and season with salt and pepper to taste; simmer gently for another 5 minutes.
  7. Serve hot, garnished with fresh thyme or olive oil.
