Description

Indulge in the delightful combination of creamy filling and fresh berries wrapped in sweet doughnuts.

Ingredients

Scale
  • 3 ½ cups all-purpose flour
  • ¼ cup granulated sugar
  • 2 ¼ teaspoons instant yeast
  • 1 teaspoon salt
  • 1 cup whole milk, warm
  • 4 tablespoons unsalted butter, melted
  • 2 large eggs
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (blueberries, raspberries, etc.)
  • 1 teaspoon lemon zest
  • Vegetable oil or canola oil for frying
  • Powdered sugar for dusting

Instructions

  1. Prepare the Dough:
    • In a large bowl, whisk together the flour, sugar, yeast, and salt.
    • In a separate bowl, combine warm milk and melted butter, then beat in the eggs.
    • Gradually add the wet ingredients to the dry ingredients and mix until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth.
    • Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size, about 1-2 hours.
  2. Prepare the Filling:
    • In a medium bowl, mix the cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Set aside.
    • In another bowl, gently fold the lemon zest into the mixed berries.
  3. Shape the Doughnuts:
    • Punch down the risen dough and roll it out on a floured surface to about ½ inch thickness.
    • Cut out circles using a doughnut cutter or a round cookie cutter.
    • Place a heaping teaspoon of cream cheese filling and a few berries in the center of each circle, and then fold over to form a ball, pinching the edges to seal.
  4. Fry the Doughnuts:
    • In a deep saucepan or deep fryer, heat the oil to 350°F (175°C).
    • Carefully fry the doughnuts in batches, turning occasionally, until golden brown, about 2-3 minutes per side.
    • Remove with a slotted spoon and drain on paper towels.
  5. Finish and Serve:
    • Once cool, dust the doughnuts with powdered sugar.
    • Serve warm or at room temperature.

Notes

  • Ensure the oil is at the correct temperature to avoid oily doughnuts. A thermometer is recommended.
  • For an extra burst of flavor, consider adding a touch of berry jam to the filling mixture.
  • These doughnuts are best enjoyed fresh but can be stored in an airtight container for a day.
  • Feel free to experiment with different berry combinations for varied flavors.
