- Prepare the Dough:
- In a large bowl, whisk together the flour, sugar, yeast, and salt.
- In a separate bowl, combine warm milk and melted butter, then beat in the eggs.
- Gradually add the wet ingredients to the dry ingredients and mix until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth.
- Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size, about 1-2 hours.
- Prepare the Filling:
- In a medium bowl, mix the cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Set aside.
- In another bowl, gently fold the lemon zest into the mixed berries.
- Shape the Doughnuts:
- Punch down the risen dough and roll it out on a floured surface to about ½ inch thickness.
- Cut out circles using a doughnut cutter or a round cookie cutter.
- Place a heaping teaspoon of cream cheese filling and a few berries in the center of each circle, and then fold over to form a ball, pinching the edges to seal.
- Fry the Doughnuts:
- In a deep saucepan or deep fryer, heat the oil to 350°F (175°C).
- Carefully fry the doughnuts in batches, turning occasionally, until golden brown, about 2-3 minutes per side.
- Remove with a slotted spoon and drain on paper towels.
