Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 large sweet potatoes, peeled and diced
  • 2 tablespoons Cajun seasoning
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 cup chicken broth

Instructions

  1. Season chicken breasts with Cajun seasoning on both sides.
  2. Heat olive oil in a skillet over medium-high heat; cook chicken for 6-7 minutes per side until cooked through. Remove and set aside.
  3. In the same skillet, sauté diced sweet potatoes with salt and pepper for about 10 minutes until softened.
  4. Add chicken broth, heavy cream, garlic powder, and onion powder; stir to combine and let simmer for 3-4 minutes.
  5. Return chicken to the skillet, sprinkle with Parmesan cheese, cover, and cook for an additional 2-3 minutes until the cheese melts.
  6. Garnish with fresh parsley before serving.
