- 4 boneless, skinless chicken breasts
- 8 ounces fresh mushrooms, sliced
- 1 cup heavy cream
- 1 cup chicken broth
- ½ cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 teaspoons minced garlic
- 1 teaspoon dried thyme
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 6-7 minutes on each side until golden brown. Remove from skillet.
- In the same skillet, sauté sliced mushrooms until browned. Add minced garlic and thyme; cook for another minute until fragrant.
- Pour in chicken broth and let simmer for about 2 minutes. Reduce heat, then stir in heavy cream and Parmesan until smooth.
- Return the chicken to the skillet, spoon sauce over it, and simmer for an additional 3-4 minutes until heated through.
- Serve garnished with fresh parsley.
