Instructions

  1. Prepare the Filling:
    In a medium bowl, mix together the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
  2. Assemble the Rolls:
    Lay out an egg roll wrapper on a clean, dry surface. Place about 2 tablespoons of the cream cheese filling near the center of the wrapper, spreading it slightly. Drizzle a small amount of caramel sauce over the cream cheese filling. Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll tightly to form a cylinder. Use a little water to seal the edge. Repeat with remaining wrappers and filling.

    Heat about 1-2 inches of vegetable oil in a deep pan to 350°F (175°C). Carefully add the rolls in batches, frying until golden brown and crisp, about 3-4 minutes per batch. Remove with a slotted spoon and drain on paper towels.
