Delicious homemade chocolate nut bars made with toasted mixed nuts, shredded coconut, and dark chocolate.

- 2 cups mixed nuts (almonds, cashews, pecans)
- 1 cup unsweetened shredded coconut
- ¼ cup honey or maple syrup
- 2 tablespoons coconut oil
- ½ teaspoon vanilla extract
- ½ teaspoon cinnamon
- ½ teaspoon fine sea salt
- 1 cup dark chocolate chips (at least 70% cacao)
- Flaky sea salt, for topping
Instructions
- In a large dry skillet over medium heat, toast the mixed nuts for about 5–7 minutes, stirring often until they’re golden and fragrant. Add the shredded coconut and toast for an additional 1–2 minutes, just until lightly browned. This step adds warmth and depth to the flavor.
- In a saucepan, gently warm the honey (or maple syrup) with coconut oil, vanilla extract, cinnamon, and fine sea salt. Stir until smooth and glossy.
- Pour the warm liquid over the toasted nuts and coconut. Mix until everything is well coated. The mixture should stick together slightly.
- Line an 8×8-inch baking dish with parchment paper. Transfer the mixture and press it down firmly and evenly. Use the back of a spoon or your hands (dampened lightly with water) to really pack it down.
- In a microwave-safe bowl or double boiler, melt the dark chocolate chips until smooth. Pour over the nut base, smoothing it into an even layer.
- Before the chocolate sets, sprinkle the top with flaky sea salt. This little detail makes all the difference—it’s the perfect contrast to the richness of the chocolate.
- Refrigerate the bars for at least 1 hour, or until firm. Once set, lift the parchment and transfer to a cutting board. Slice into squares or bars and store in an airtight container.
