Description
A deliciously rich and festive pumpkin French toast, perfect for brunch or a cozy breakfast.
Ingredients
Scale
- 1 loaf brioche or thick-sliced bread
- 1 cup pumpkin puree
- 4 large eggs
- 1 cup milk
- 1/4 cup heavy cream
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ground ginger
- Pinch of salt
- Butter (for cooking)
- Whipped cream (for topping)
- Chopped pecans (for garnish)
- Maple syrup or powdered sugar (for serving)
Instructions
- Prepare the Batter: In a large bowl, whisk together the pumpkin puree, eggs, milk, heavy cream, sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt until smooth.
- Prepare the Bread: Slice the brioche or thick-sliced bread into 1-inch slices if not pre-sliced.
- Coat the Bread: Dip each slice of bread into the pumpkin mixture, ensuring both sides are well-coated. Let it soak for a minute to absorb the flavors.
- Cook the French Toast: Heat a skillet or griddle over medium heat and add a generous amount of butter. Once the butter is melted and hot, place the coated bread slices onto the skillet. Cook each side for about 3-4 minutes, or until golden brown and cooked through.
- Serve: Stack the cooked French toast on a plate. Top with a dollop of whipped cream and sprinkle chopped pecans over the top. Drizzle with maple syrup or dust with powdered sugar before serving.
Notes
- For a richer flavor, use whole milk or half-and-half instead of skim milk.
- If you prefer a deeper pumpkin spice flavor, adjust the spices to your taste.
- To keep cooked French toast warm while preparing batches, place them on a baking sheet in a low-temperature oven.
- Garnish with additional toppings like fresh fruits or caramel sauce for added indulgence.
