- 4 large potatoes, peeled and diced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups cooked chicken, shredded or diced
- 1 tablespoon butter
- 2 cups fresh broccoli florets
- 1/2 cup sour cream
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large pot, cook the diced potatoes until tender.
- Drain and set aside.
- In a skillet, heat olive oil over medium heat and sauté the broccoli until bright green and tender, about 5 minutes.
- In a large mixing bowl, combine the cooked potatoes, sautéed broccoli, shredded chicken, sour cream, milk, cheddar cheese, Parmesan cheese, garlic powder, onion powder, and season with salt and pepper.
- Transfer the mixture to a greased baking dish and top with butter.
- Bake in the preheated oven for 25-30 minutes, or until hot and bubbly.
- Garnish with fresh parsley before serving.
Notes
- This casserole can be prepared ahead of time and stored in the refrigerator before baking.
