Description

This creamy chicken and broccoli casserole is a comforting dish made with shredded chicken, tender broccoli, and a rich cheese sauce.


Ingredients

  • 4 large potatoes, peeled and diced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked chicken, shredded or diced
  • 1 tablespoon butter
  • 2 cups fresh broccoli florets
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, cook the diced potatoes until tender.
  3. Drain and set aside.
  4. In a skillet, heat olive oil over medium heat and sauté the broccoli until bright green and tender, about 5 minutes.
  5. In a large mixing bowl, combine the cooked potatoes, sautéed broccoli, shredded chicken, sour cream, milk, cheddar cheese, Parmesan cheese, garlic powder, onion powder, and season with salt and pepper.
  6. Transfer the mixture to a greased baking dish and top with butter.
  7. Bake in the preheated oven for 25-30 minutes, or until hot and bubbly.
  8. Garnish with fresh parsley before serving.
