This hearty, one-pot lasagna soup is a comforting dish packed with flavor and made easy!

- 1 lb ground beef
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 (24-oz) jar marinara sauce
- 4 cups beef or chicken broth
- 1 (14 oz) can diced tomatoes, undrained
- 2 teaspoons Italian seasoning
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional)
- 8 oz lasagna noodles, broken into pieces (or mafalda pasta)
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil or parsley, chopped, for garnish
- Salt and black pepper to taste
Instructions
- In a large pot or Dutch oven, brown the ground beef over medium-high heat, breaking it apart with a spoon. Drain excess fat if needed.
- Add diced onion and sauté for 3–4 minutes until softened. Stir in minced garlic and cook for 1 minute until fragrant.
- Pour in marinara sauce, broth, diced tomatoes, Italian seasoning, basil, and red pepper flakes (if using). Season with salt and pepper. Bring to a boil.
- Add broken lasagna noodles to the pot. Reduce heat to medium-low and simmer for 10–12 minutes, or until pasta is tender, stirring occasionally to prevent sticking.
- In a small bowl, mix ricotta, half the mozzarella, and half the Parmesan until well combined.
- Once pasta is cooked, turn off heat. Drop spoonfuls of the cheese mixture over the soup.
- Sprinkle remaining mozzarella and Parmesan over the top. Cover the pot for 2–3 minutes to let the cheese melt.
- Garnish with fresh basil or parsley and serve hot with extra Parmesan on the side.

- This recipe can be made with ground turkey or chicken as a leaner option.
