Description

Delicious pumpkin spice cookies perfect for fall!


Ingredients

  • 2 1/4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons ground ginger
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 large egg
  • 1/3 cup pure pumpkin puree (not pumpkin pie filling)
  • 1/4 cup molasses
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
  2. In a medium bowl, whisk together the flour, baking soda, ground ginger, cinnamon, cloves, and salt. Set aside.
  3. In a large bowl, using a hand mixer or stand mixer, cream together the softened butter, 1 cup granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the egg until fully incorporated, then mix in the pumpkin puree and molasses.
  5. Gradually add the dry flour mixture to the wet ingredients, mixing on low speed just until combined. Do not overmix.
  6. In a small shallow bowl, combine the 1/2 cup granulated sugar and 2 teaspoons of cinnamon for rolling.
  7. Scoop dough using a tablespoon or a small cookie scoop (about 1-inch balls). Roll each ball in the cinnamon-sugar mixture until well coated.
  8. Place dough balls on the prepared baking sheets, spacing them about 2 inches apart as they will spread slightly.
  9. Bake for 10-12 minutes, or until the edges are set and the tops look crackled. The centers may still look soft.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
