Delicious pumpkin spice cookies perfect for fall!

- 2 1/4 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons ground ginger
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/4 cup packed light brown sugar
- 1 large egg
- 1/3 cup pure pumpkin puree (not pumpkin pie filling)
- 1/4 cup molasses
- 1/2 cup granulated sugar
- 2 teaspoons ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
- In a medium bowl, whisk together the flour, baking soda, ground ginger, cinnamon, cloves, and salt. Set aside.
- In a large bowl, using a hand mixer or stand mixer, cream together the softened butter, 1 cup granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg until fully incorporated, then mix in the pumpkin puree and molasses.
- Gradually add the dry flour mixture to the wet ingredients, mixing on low speed just until combined. Do not overmix.
- In a small shallow bowl, combine the 1/2 cup granulated sugar and 2 teaspoons of cinnamon for rolling.
- Scoop dough using a tablespoon or a small cookie scoop (about 1-inch balls). Roll each ball in the cinnamon-sugar mixture until well coated.
- Place dough balls on the prepared baking sheets, spacing them about 2 inches apart as they will spread slightly.
- Bake for 10-12 minutes, or until the edges are set and the tops look crackled. The centers may still look soft.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- These cookies are best enjoyed fresh out of the oven but can be stored in an airtight container for up to a week.
