Description

Delicious chocolate cupcakes topped with a smooth chocolate frosting.


Ingredients

Scale
  • 1 1/2 cups flour
  • 1 cup sugar
  • 1/4 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup warm coffee
  • 1 tsp vinegar
  • 2 tsp vanilla extract
  • 1/3 cup olive oil
  • 1 cup unsalted butter (room temperature)
  • 1/3 cup sweetened condensed milk
  • 1/3 cup semi-sweet chocolate chips
  • 3 egg yolks
  • 1/4 cup water

Instructions

  1. Preheat oven to 350°F (175°C). Line cupcake pan.
  2. Whisk dry ingredients in a large bowl.
  3. In another bowl, mix coffee, oil, vanilla, vinegar.
  4. Combine wet and dry ingredients. Mix just until smooth.
  5. Fill liners 2/3 full.
  6. Bake 18–20 minutes until toothpick comes out clean.
  7. Cool completely.
  8. In saucepan, whisk egg yolks, water, and condensed milk.
  9. Cook over medium-low heat, stirring constantly until thickened.
  10. Remove from heat, add chocolate, stir until smooth.
  11. Cool completely.
  12. Beat butter until fluffy (about 5 minutes).
  13. Add chocolate mixture and beat until smooth.
  14. Pipe frosting onto cooled cupcakes.
  15. Garnish as desired.
