- 1 cup fresh raspberries
- ½ cup powdered sugar
- 2 tablespoons lemon juice
- 1 tablespoon milk
Instructions
- Prepare the Cookie Dough:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add this dry mix to the wet mixture, mixing until combined. - Shape and Bake Cookies:
Roll tablespoons of dough into balls and place them on the prepared baking sheet, spacing them about 2 inches apart.
Slightly press each dough ball down with your fingers.
Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
Allow the cookies to cool on a wire rack. - Make Raspberry Drizzle:
In a small saucepan over medium heat, combine fresh raspberries and lemon juice.
Cook until raspberries break down, then strain through a fine mesh sieve to remove seeds.
Mix the raspberry puree with powdered sugar until smooth and thick enough to drizzle. Add milk as needed. - Decorate the Cookies:
Using a spoon or piping bag, drizzle the raspberry mixture over cooled cookies.
Optionally, top each cookie with a fresh raspberry.
