- 6 cloves garlic, minced
- 4 tablespoons olive oil
- 2 teaspoons dried oregano
- 1 teaspoon salt
- 1 teaspoon ground black pepper

- 2 tablespoons fresh lemon juice
- 2 pounds baby potatoes, halved
- 2 tablespoons fresh parsley, chopped
Instructions
- Marinate the chicken by mixing garlic, olive oil, oregano, salt, pepper, red pepper flakes (optional), and lemon juice in a bowl. Coat the chicken thighs well and refrigerate for at least 30 minutes.
- Preheat your oven to 400°F (200°C). Toss halved baby potatoes with olive oil, salt, and pepper until evenly coated.
- Place marinated chicken thighs skin-side up on a baking sheet with seasoned potatoes around them. Bake for 35-40 minutes until the chicken reaches an internal temperature of 165°F.
