- 4 ounces full-fat cream cheese, softened
- 4 cups powdered sugar, sifted
- 1 teaspoon pure vanilla extract
- 2 1/2 cups sweetened shredded coconut
- 1 tablespoon ground cinnamon, for rolling
Instructions
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Gradually add the sifted powdered sugar, about 1 cup at a time, beating on low speed until fully incorporated after each addition. The mixture will be very thick.
- Beat in the vanilla extract.
- Using a sturdy spatula or your hands, mix in the shredded coconut until a cohesive dough forms.
- Scoop out tablespoon-sized portions of the dough and roll them into small oval or round shapes, resembling little potatoes.
- Place the ground cinnamon in a small bowl. Roll each candy piece in the cinnamon until completely coated.
- Place the finished candies on a parchment-lined baking sheet or plate.
- Refrigerate for at least 1 hour to firm up before serving. Store leftovers in an airtight container in the refrigerator for up to 1 week.
