This delicious mole chicken is packed with flavor and easy to make.
Ingredients

- 3–4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1 medium onion, diced
- 1 can (14 oz) fire-roasted tomatoes
- 1 cup mole sauce mix
- 1 cup chicken broth
- 1 tsp cumin
- 1 tsp oregano
- 2 oz dark chocolate, chopped
- 2 tbsp olive oil
- Salt & pepper to taste
Instructions
- Prepare your ingredients by finely chopping the onion and garlic.
- In a large skillet over medium heat, add olive oil and sauté onions until translucent. Add garlic and cook until fragrant (about 1 minute).
- Season the chicken breasts with salt and pepper, then add them to the skillet, browning each side for about 3-4 minutes.
- Pour in the fire-roasted tomatoes and chicken broth; bring to a gentle simmer while scraping up any browned bits from the pan.
- Stir in the mole sauce mix, cumin, and oregano. Let it simmer on low heat for 25-30 minutes until thickened.
- Add the chopped chocolate and stir until melted. Adjust seasoning as necessary before serving.
