Ingredients

  • 34 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 medium onion, diced
  • 1 can (14 oz) fire-roasted tomatoes
  • 1 cup mole sauce mix
  • 1 cup chicken broth
  • 1 tsp cumin
  • 1 tsp oregano
  • 2 oz dark chocolate, chopped
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Prepare your ingredients by finely chopping the onion and garlic.
  2. In a large skillet over medium heat, add olive oil and sauté onions until translucent. Add garlic and cook until fragrant (about 1 minute).
  3. Season the chicken breasts with salt and pepper, then add them to the skillet, browning each side for about 3-4 minutes.
  4. Pour in the fire-roasted tomatoes and chicken broth; bring to a gentle simmer while scraping up any browned bits from the pan.
  5. Stir in the mole sauce mix, cumin, and oregano. Let it simmer on low heat for 25-30 minutes until thickened.
  6. Add the chopped chocolate and stir until melted. Adjust seasoning as necessary before serving.
