Ingredients

  • 8 oz fettuccine or penne pasta
  • 1 cup roasted red peppers (jarred or homemade)
  • 2 cloves fresh garlic, minced
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: In a large pot, boil salted water and cook pasta according to package instructions until al dente (about 8-10 minutes). Reserve some pasta water before draining.
  2. Sauté the Garlic: In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Blend the Sauce: In a blender, combine roasted red peppers, sautéed garlic, heavy cream, and Parmesan cheese. Blend until smooth.
  4. Combine Everything: Return the drained pasta to the pot over low heat. Pour in the red pepper sauce and stir well. If needed, add reserved pasta water gradually for desired consistency.
  5. Season & Serve: Adjust seasoning with salt and pepper. Serve immediately with extra Parmesan on top.

Notes

  • For a spicy kick, add red pepper flakes to the sauce.
