Ingredients

- 8 oz fettuccine or penne pasta
- 1 cup roasted red peppers (jarred or homemade)
- 2 cloves fresh garlic, minced
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook the Pasta: In a large pot, boil salted water and cook pasta according to package instructions until al dente (about 8-10 minutes). Reserve some pasta water before draining.
- Sauté the Garlic: In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Blend the Sauce: In a blender, combine roasted red peppers, sautéed garlic, heavy cream, and Parmesan cheese. Blend until smooth.
- Combine Everything: Return the drained pasta to the pot over low heat. Pour in the red pepper sauce and stir well. If needed, add reserved pasta water gradually for desired consistency.
- Season & Serve: Adjust seasoning with salt and pepper. Serve immediately with extra Parmesan on top.
Notes
- For a spicy kick, add red pepper flakes to the sauce.
- This recipe works well with both fettuccine and penne pasta.
