Description

This herb-crusted standing rib roast is a succulent dish perfect for holiday gatherings or special occasions.


Ingredients

  • 45 lbs bone-in standing rib roast
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh thyme, finely chopped
  • 2 tablespoons fresh parsley, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. In a bowl, combine rosemary, thyme, parsley, garlic, and olive oil until well mixed.
  3. Generously season the rib roast with salt and pepper.
  4. Rub the herb mixture all over the roast.
  5. Place the roast on a rack in a roasting pan and bake for 20 minutes.
  6. Reduce temperature to 325°F (163°C) and continue cooking until desired doneness (about 60 minutes for medium-rare).
  7. Let the roast rest for at least 15 minutes before slicing and serving.
