This herb-crusted standing rib roast is a succulent dish perfect for holiday gatherings or special occasions.

- 4–5 lbs bone-in standing rib roast
- 2 tablespoons fresh rosemary, finely chopped
- 2 tablespoons fresh thyme, finely chopped
- 2 tablespoons fresh parsley, finely chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
Instructions
- Preheat your oven to 450°F (232°C).
- In a bowl, combine rosemary, thyme, parsley, garlic, and olive oil until well mixed.
- Generously season the rib roast with salt and pepper.
- Rub the herb mixture all over the roast.
- Place the roast on a rack in a roasting pan and bake for 20 minutes.
- Reduce temperature to 325°F (163°C) and continue cooking until desired doneness (about 60 minutes for medium-rare).
- Let the roast rest for at least 15 minutes before slicing and serving.
