Ingredients

  • 4 (6 oz) salmon fillets
  • 3 cloves garlic, minced
  • 2 tbsp fresh lemon juice
  • 1 cup cherry tomatoes, halved
  • 1 medium zucchini, sliced thinly
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss cherry tomatoes and zucchini with olive oil, salt, and pepper until well coated.
  3. Place salmon fillets skin-side down on the baking sheet. Drizzle with olive oil and squeeze fresh lemon juice over each fillet.
