- 3 cloves garlic, minced
- 2 tbsp fresh lemon juice
- 1 cup cherry tomatoes, halved
- 1 medium zucchini, sliced thinly
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, toss cherry tomatoes and zucchini with olive oil, salt, and pepper until well coated.
- Place salmon fillets skin-side down on the baking sheet. Drizzle with olive oil and squeeze fresh lemon juice over each fillet.
- Sprinkle minced garlic over the salmon and arrange the seasoned veggies around it.
- Bake for 15-20 minutes or until the salmon flakes easily with a fork.
- Serve hot, drizzled with additional lemon juice if desired.
