Description

Delicious mini muffins glazed with a sweet maple icing, perfect for breakfast or a snack.


Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1/2 cup full-fat milk
  • 1/4 cup pure maple syrup
  • 1/4 cup unsalted butter (melted)
  • 1 cup powdered sugar
  • 2 tbsp pure maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a bundt pan or mini muffin tins.
  2. In a large bowl, whisk together all-purpose flour, baking powder, and granulated sugar until well combined.
  3. In a separate bowl, mix eggs, milk, melted butter, and half of the maple syrup until smooth.
  4. Pour the wet ingredients into the dry mixture and stir gently until just combined.
  5. Spoon the batter into prepared pans and bake: 15-20 minutes for mini muffins or about 30 minutes for a bundt pan.
  6. Allow to cool slightly before glazing by whisking powdered sugar with remaining maple syrup until smooth; drizzle over cake pieces.
