Ingredients

  • 1 cup broccoli florets (fresh or frozen)
  • ¼ cup low-sodium soy sauce
  • 2 tsp sesame oil
  • 2 tbsp honey or brown sugar
  • 1 tbsp cornstarch

Instructions

  1. Cut chicken into bite-sized pieces and season lightly with salt and pepper.
  2. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add chicken and cook until golden brown (5-7 minutes).
  3. Add minced garlic, bell peppers, and broccoli; stir-fry for about 3-4 minutes until vegetables soften.
  4. In a bowl, whisk together soy sauce, honey (or brown sugar), sesame oil, and cornstarch until smooth; pour over chicken and veggies in the skillet.
  5. Stir gently until everything is evenly coated and bubbling (2-3 minutes).
  6. Sprinkle roasted peanuts on top before serving.
