- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter (room temperature)
- 1/2 cup finely chopped pecans
- 1 large egg
- 1 tsp vanilla extract
- 2 cups powdered sugar (for filling)
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt.
- In another bowl, cream butter with brown and granulated sugars until fluffy.
- Beat in the egg and vanilla until combined.
- Gradually mix dry ingredients into the wet mixture, then fold in chopped pecans.
- Scoop tablespoon-sized dollops onto prepared sheets, spaced two inches apart.
- Bake for 10-12 minutes until golden.
- Let cookies cool completely; prepare the filling by mixing powdered sugar with softened butter until smooth. Optionally add maple syrup for flavor enhancement.
- Spread filling between two cooled cookies to create sandwiches.
