- 4 bone-in chicken thighs
- 2 tbsp fresh ginger, grated
- 4 garlic cloves, minced
- 1/4 cup low-sodium soy sauce
- 1/4 cup brown sugar
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
- Pat chicken thighs dry with paper towels; season generously with salt and pepper.
- In a bowl, whisk together soy sauce, brown sugar, garlic, ginger, rice vinegar, and sesame oil.
- Place chicken in a resealable bag or shallow dish; pour half the marinade over the chicken and marinate for at least 30 minutes (or overnight).
- Arrange chicken skin-side up in the baking dish and bake for 35-40 minutes until internal temperature reaches 165°F (74°C).
- Pour remaining marinade over the chicken and broil for an additional 3-4 minutes until caramelized.

- Marinating overnight enhances the flavor significantly.
- Serve with steamed rice or vegetables for a complete meal.
