A hearty and flavorful soup with Italian sausage, fresh vegetables, and pasta.
Ingredients

- 1 pound Italian sausage (mild or spicy)
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional)
- 1 can (14 ounces) diced tomatoes
- 4 cups chicken or vegetable broth
- 1 cup uncooked pasta (ditalini or small shells)
- 2 cups fresh spinach (or kale)

Instructions
- In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned; remove and set aside.
- In the same pot, sauté onion, garlic, carrots, and celery for about 5-7 minutes until tender. Stir in oregano, basil, and red pepper flakes; cook until fragrant.
- Add diced tomatoes and broth; bring to a boil then reduce heat to simmer.
- Stir in uncooked pasta and cook according to package instructions until al dente.
- Return sausage to the pot along with spinach; season with salt and pepper. Cook until spinach wilts.
- Serve hot, garnished with fresh herbs and grated Parmesan cheese.
Notes
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
- Add more vegetables like zucchini or bell peppers for extra nutrition.
