- Heat over medium heat until it starts to simmer.
- In a small bowl, mix the cornstarch with a bit of water to form a slurry.
- Slowly add the slurry to the cherry mixture, stirring continuously until thickened.
- Remove from heat and let it cool.

Prepare the Whipped Cream:
- In a large mixing bowl, combine heavy cream, powdered sugar, and vanilla extract.
- Whip until soft peaks form using an electric mixer. Be careful not to overbeat.

Assemble the Trifle:
- In a trifle bowl, start with a layer of vanilla sponge cake cubes.
- Spoon a layer of cherry filling over the cake.
- Add a layer of whipped cream over the cherry filling.
- Repeat the layers until the bowl is full, finishing with a layer of whipped cream.

- Top with chocolate shavings and additional cherries for decoration.

- Ensure the cherry filling is completely cooled before layering to prevent melting the whipped cream.
