Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
- Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- Cream Butter and Sugar: In a large bowl, beat the butter and sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition.
- Flavor Addition: Mix in the lemon zest and vanilla extract.
- Combine Dry and Wet Ingredients: Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Start and end with the flour mixture. Mix until just combined.
- Bake the Cake Layers: Divide the batter evenly among the prepared cake pans. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
- Prepare the Filling: In a medium bowl, combine the sliced strawberries with lemon juice and strawberry jam. Set aside.
- Make the Whipped Cream: In a large bowl, beat the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.
- Assemble the Cake: Place one cake layer on a serving plate. Spread a portion of the strawberry filling over the top. Add a layer of whipped cream. Repeat with the second layer. Place the third cake layer on top.
- Frost the Cake: Spread the remaining whipped cream over the top and sides of the cake.
- Garnish: Decorate with fresh strawberries and lemon slices on top for a beautiful presentation.
