Description

A delightful layered cake featuring fresh strawberries and a refreshing lemon flavor.

Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tablespoon lemon zest
  • 2 teaspoons vanilla extract
  • 1 cup buttermilk
  • 1 cup fresh strawberries, sliced
  • 2 tablespoons lemon juice
  • 1 cup strawberry jam
  • 2 cups heavy cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh strawberries and lemon slices for garnish

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Cream Butter and Sugar: In a large bowl, beat the butter and sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition.
  4. Flavor Addition: Mix in the lemon zest and vanilla extract.
  5. Combine Dry and Wet Ingredients: Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Start and end with the flour mixture. Mix until just combined.
  6. Bake the Cake Layers: Divide the batter evenly among the prepared cake pans. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  7. Prepare the Filling: In a medium bowl, combine the sliced strawberries with lemon juice and strawberry jam. Set aside.
  8. Make the Whipped Cream: In a large bowl, beat the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.
  9. Assemble the Cake: Place one cake layer on a serving plate. Spread a portion of the strawberry filling over the top. Add a layer of whipped cream. Repeat with the second layer. Place the third cake layer on top.
  10. Frost the Cake: Spread the remaining whipped cream over the top and sides of the cake.
  11. Garnish: Decorate with fresh strawberries and lemon slices on top for a beautiful presentation.

Notes

  • Make sure all your ingredients are at room temperature for a smooth batter.
  • You can also brush the cake layers with a simple syrup made of equal parts sugar and water for extra moisture.
  • The cake can be made a day in advance and assembled just before serving.
  • Use a serrated knife for even slicing of the cake layers.
