- ½ cup unsalted butter, softened
- 3 large eggs
- ½ cup fresh lemon juice
- Zest of 1 lemon
- ¼ cup whole milk
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt; set aside.
- In a large mixing bowl, cream the softened butter and sugar until light and fluffy (about three minutes).
- Add eggs one at a time, beating well after each addition. Stir in fresh lemon juice and zest.
- Gradually add the dry ingredients alternately with milk, starting and ending with the dry mixture until smooth.
- Pour batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean. Let cool before serving.
