Description

This delicious lemon cake is light and fluffy, perfect for any occasion.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 3 large eggs
  • ½ cup fresh lemon juice
  • Zest of 1 lemon
  • ¼ cup whole milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt; set aside.
  3. In a large mixing bowl, cream the softened butter and sugar until light and fluffy (about three minutes).
  4. Add eggs one at a time, beating well after each addition. Stir in fresh lemon juice and zest.
  5. Gradually add the dry ingredients alternately with milk, starting and ending with the dry mixture until smooth.
  6. Pour batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean. Let cool before serving.
