  • 1/4 cup honey
  • 2 tbsp soy sauce
  • 1 lemon, juiced and zest finely grated
  • 1 tbsp fresh ginger, grated
  • 3 cloves garlic, minced
  • 1/4 cup chicken broth
  • Salt and pepper, to taste
  • 1 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
  • Scallions or chives, chopped (for garnish)
  • Lemon wedges (for garnish)

Instructions

  1. Marinate the Chicken: In a bowl, combine soy sauce, half the lemon juice, ginger, and garlic. Add the chicken pieces, toss to coat, and let marinate for at least 20 minutes.
  2. Prepare the Sauce: In a separate bowl, mix the honey, remaining lemon juice, lemon zest, and chicken broth. Set aside.
  3. Cook the Chicken: Heat oil in a large pan over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
  4. Make the Sauce: In the same pan, pour the honey-lemon mixture. Bring to a simmer and let it reduce slightly. If you prefer a thicker sauce, add the cornstarch mixture and stir until the sauce thickens.
  5. Combine: Return the chicken to the pan and toss to coat with the sauce. Season with salt and pepper to taste.
  6. Garnish: Sprinkle chopped scallions or chives on top. Serve with lemon wedges on the side.
