- 1 lb boneless chicken breast, cut into bite-sized pieces
- 2 tbsp olive oil or vegetable oil
- 1/4 cup honey
- 2 tbsp soy sauce
- 1 lemon, juiced and zest finely grated
- 1 tbsp fresh ginger, grated
- 3 cloves garlic, minced
- 1/4 cup chicken broth
- Salt and pepper, to taste
- 1 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
- Scallions or chives, chopped (for garnish)
- Lemon wedges (for garnish)
Instructions
- Marinate the Chicken: In a bowl, combine soy sauce, half the lemon juice, ginger, and garlic. Add the chicken pieces, toss to coat, and let marinate for at least 20 minutes.
- Prepare the Sauce: In a separate bowl, mix the honey, remaining lemon juice, lemon zest, and chicken broth. Set aside.
- Cook the Chicken: Heat oil in a large pan over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
- Make the Sauce: In the same pan, pour the honey-lemon mixture. Bring to a simmer and let it reduce slightly. If you prefer a thicker sauce, add the cornstarch mixture and stir until the sauce thickens.
- Combine: Return the chicken to the pan and toss to coat with the sauce. Season with salt and pepper to taste.
- Garnish: Sprinkle chopped scallions or chives on top. Serve with lemon wedges on the side.

- For extra flavor, let the chicken marinate longer or even overnight in the refrigerator.
