Description

Ingredients

  • 300ml heavy whipping cream
  • 50g powdered sugar, plus extra for dusting
  • 1 tsp vanilla extract
  • 2 ripe mangoes, peeled and diced
  • Mango puree (optional, for topping)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a 10×15 inch jelly roll pan with parchment paper and lightly grease it.
  2. Prepare the Sponge Cake: In a mixing bowl, beat the eggs, sugar, and vanilla extract together using an electric mixer on high speed for about 5 minutes, until the mixture is thick and pale. Sift together the flour, baking powder, and salt. Gently fold them into the egg mixture using a spatula until just combined.
  3. Bake the Sponge Cake: Pour the batter into the prepared pan, spreading it evenly. Bake for 10-12 minutes, or until the cake springs back when touched. Remove from the oven and immediately roll the cake from one short end to the other, along with the parchment paper. Let it cool completely on a wire rack.
  4. Prepare the Filling: In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Gently fold in half of the diced mangoes.
  5. Assemble the Cake Roll: Carefully unroll the cooled cake. Spread the cream and mango mixture evenly over the cake, leaving a small border around the edges. Roll the cake back up without the parchment paper, ensuring it’s tight but gentle to avoid breaking.
  6. Decorate: Place on a serving platter. Dust with powdered sugar and top with the remaining diced mangoes. Drizzle with mango puree for added flavor.

Notes

  • Make sure the cake is completely cooled before adding the cream filling to prevent it from melting.
  • Chill the roll for at least an hour before slicing to ensure cleaner cuts.
