- 1 orange, peeled and chopped

Instructions
- Wash and peel the carrots, then grate them finely using a box grater or food processor.
- Peel the orange, remove seeds, and cut it into small bite-sized segments.
- In a small bowl, whisk together lemon juice, olive oil, honey, cumin, and salt until emulsified.
- In a large bowl, combine grated carrots, orange pieces, and chopped parsley.
- Pour the dressing over the salad and toss until everything is evenly coated.
- Chill the salad for 15–30 minutes before serving to allow the flavors to meld.
