Delicious caramel shortbread bars topped with rich chocolate and a sprinkle of flaky sea salt.

- 1 cup unsalted butter (softened)
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/2 cup unsalted butter (for caramel)
- 1/2 cup brown sugar
- 1 can (14 oz) sweetened condensed milk
- 2 tablespoons golden syrup or corn syrup
- 1 1/2 cups dark chocolate chips or chopped chocolate
- Flaky sea salt (optional, for topping)
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a bowl, cream 1 cup softened butter and granulated sugar until light. Mix in flour to form dough.
- Press dough into the prepared pan. Bake for 18–20 minutes or until lightly golden. Let cool completely.
- In a saucepan, combine 1/2 cup butter, brown sugar, condensed milk, and syrup. Cook over medium heat, whisking constantly, until thickened and golden (about 10 minutes).
- Pour caramel over cooled shortbread, spread evenly, and let it set at room temp or in the fridge.
- Melt chocolate using a double boiler or microwave. Pour over set caramel and spread with a spatula.
- Sprinkle flaky sea salt if desired. Let chocolate firm up completely before slicing.
- Use a warm, sharp knife to slice into bars for clean edges. Serve and enjoy.
