Ingredients

  • 1 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup fruit jam (strawberry, raspberry, etc.)
  • powdered sugar – for dusting

Instructions

  1. Mix the Dough: In a large mixing bowl, beat the softened butter and granulated sugar until creamy and smooth. Add vanilla extract and mix until combined. Gradually add the flour and salt, mixing until a soft dough forms.
  2. Chill the Dough: Divide the dough in two equal parts. Wrap each part in plastic wrap and refrigerate for 1 hour until firm.
  3. Roll and Fill: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Roll each portion of dough into a rectangle about 1/4 inch thick. Spread a thin layer of jam over each rectangle, leaving a small border.
  4. Form the Cookies: Carefully roll up each rectangle tightly from the long side, forming a log. Slice each log into 1/2-inch thick pieces and place on the prepared baking sheet.
  5. Bake: Bake for 12-15 minutes, or until the edges are lightly golden. Remove from oven and let cool on a wire rack.
  6. Finish the Cookies: Once cooled, dust generously with powdered sugar.
