Description

Delicious pumpkin cookies with a creamy cheesecake filling.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 tsp pumpkin pie spice
  • 1 tsp ground cinnamon
  • 3/4 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1/2 cup pumpkin puree
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1/2 tsp vanilla extract

Instructions

  1. Line a small tray or plate with parchment paper. In a medium bowl, beat the cream cheese, 1/4 cup granulated sugar, and 1/2 tsp vanilla extract until smooth. Scoop 18 small portions onto the tray, then freeze for 20 to 30 minutes until firm.
  2. In a separate bowl, whisk together the flour, baking powder, salt, pumpkin pie spice, and cinnamon.
  3. In a large mixing bowl, beat the butter, brown sugar, and 1/2 cup granulated sugar until creamy. Mix in the egg yolk, 1 tsp vanilla extract, and pumpkin puree until smooth.
  4. Add the dry ingredients to the wet ingredients and mix just until a soft dough forms. Chill the dough for 30 minutes so it is easier to handle.
  5. Preheat the oven to 350°F. Line two baking sheets with parchment paper.
  6. Scoop portions of dough and flatten each one in your hand. Place one frozen cheesecake filling portion in the center, then wrap the dough around it and seal completely.
  7. Arrange the cookies on the prepared baking sheets, leaving space between them.
  8. Bake for 12 to 14 minutes, or until the edges are set and the tops look dry. Do not overbake.
  9. Let the cookies cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
  10. Chill the cookies for a firmer cheesecake center or serve once fully cooled.

Notes

  • For best results, chill the dough and the filled cookies before baking.
  • Adjust the spices to your taste for more or less pumpkin flavor.
