Description

Ingredients

  • 1 lb lean ground beef
  • 2 cups assorted bell peppers (red, yellow, green), chopped
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté for about 3 minutes until softened.
  3. Stir in the bell peppers and cook for an additional 2-3 minutes until tender.
  4. Push the vegetables to one side of the skillet and add the ground beef. Cook until browned, about 5-7 minutes, breaking it apart with a spatula.
  5. Mix everything together, then stir in garlic, cumin, and paprika. Cook for another 2-3 minutes until fragrant.
  6. Season with salt and pepper to taste. Serve hot over rice or pasta if desired.
