Description

Deliciously rich red velvet mini cake bites topped with creamy frosting and festive sprinkles.

Ingredients

Scale
  • 1 1/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • 1/2 cup vegetable oil
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon white vinegar
  • 1 egg
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Red sprinkles or crumbs for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a 9×9 inch baking pan with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
  3. Combine Wet Ingredients: In another bowl, whisk together the buttermilk, oil, red food coloring, vanilla extract, and vinegar.
  4. Combine All Ingredients: Gradually add the dry ingredients to the wet ingredients and mix until well combined. Stir in the egg.
  5. Bake: Pour the batter into the prepared baking pan and smooth the top. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  6. Cream Mixture: In a large bowl, beat the cream cheese and butter together until smooth.
  7. Add Sugar & Flavor: Gradually add the powdered sugar, beating until light and fluffy. Stir in the vanilla extract.
  8. Cut & Layer: Once the cake is cooled, cut it into small squares. Slice each square in half horizontally.
  9. Fill & Frost: Spread a layer of cream cheese frosting between the cake layers and on top.
  10. Garnish: Sprinkle red sprinkles or crumbs on top for decoration.
