Description

Ingredients

  • 1 cup (240 ml) heavy cream
  • 8 oz (225 g) bittersweet chocolate, finely chopped
  • 1/2 cup (120 g) hazelnut spread (like Nutella)
  • 1 tsp vanilla extract
  • 1 cup (130 g) finely chopped hazelnuts
  • 8 oz (225 g) milk chocolate, melted for coating
  • Pinch of salt
  • Optional: additional chopped hazelnuts for topping

Instructions

  1. Prepare the Ganache:
    – In a small saucepan, heat the heavy cream over medium heat until it starts to simmer. Do not boil.
    – Remove from heat and pour over the finely chopped bittersweet chocolate in a heatproof bowl.
    – Let it sit for a minute, then stir until smooth.
  2. Add Hazelnut Spread:
    – Add the hazelnut spread, vanilla extract, and a pinch of salt to the melted chocolate mixture.
    – Mix until everything is well combined and smooth.
  3. Chill the Mixture:
    – Cover the bowl and refrigerate for at least 2 hours or until the mixture is firm enough to handle.
  4. Form the Truffles:
    – Use a small scoop or spoon to portion out small balls of the chocolate mixture.
    – Roll them between your palms to form smooth balls.
    – Roll each truffle in the finely chopped hazelnuts to coat.
  5. Coat the Truffles:
    – Melt the milk chocolate in a microwave or double boiler until smooth.
    – Using a fork, dip each truffle into the melted chocolate, ensuring it’s completely covered.
    – Place the coated truffles on a parchment-lined tray. Sprinkle with additional hazelnuts if desired.
  6. Final Chill:
    – Refrigerate the truffles until the chocolate coating is set, about 30 minutes.
